All Purpose Spice Rub

1/3 cup coarse salt
1/4 cup packed brown sugar
1/4 cup paprika
2 Tbsp. ground black pepper
2 Tbsp. dried oregano
2 Tbsp. dried thyme
1 Tbsp. cayenne pepper

This makes 1 1/4 cups (enough to season 5-10 pounds of meat.) Store in an airtight container for up to 6 months. This is great stuff! It is especially good if used to season a pot-roast.
